Buildworld itself shouldn't touch anything but the target object tree.
Installworld, however, might put olde sendmail back in. You can turn
building and installing the system supplied sendmail off in make.conf.

The question borders on the religious so if you really want to know
you'll need to do research and form an opinion yourself.
Sendmail is older and has a long history of adapting from a benign 'net
but having to deal with various other networks, to a hostile internet,
the hard way. postfix was designed from the beginning with such lessons
in mind. You can build acceptable email systems with both.

I've used exim, and liked it for its readable configuration files. The
authors provide a reasonable background on its how and why and how much
mail it can handle.
qmail is djb produce and as such any argument about it tends to get
polarized in a hurry. Personally, I don't like qmail, from not liking
both its and djb's style. Apart from that, I don't consider it fit for
use on the internet.
As with all versatile tools, which at least sendmail and exim are,
postfix I haven't worked with but likely also qualifies, you need to be
knowledgeable yourself, not just with the tool but also with the task
you're trying to do. For that reason alone you'll have catching up to
do. If you really want to know opinions on the pros and cons of the
various MTAs, as they say, google is your friend. The archive of this
newsgroup, for one.
On the other hand, if all you want is hand off mail to your isp, you
don't even need a fully fledged MTA like sendmail or postfix; you could
get a minimalist SEP MTA from the ports and use that.
